Food Systems Consultant Training

Level 1: January 30 & 31, 2024

  • Conducting Market Research
  • Food Business Models Basics – Benchmarks and Metrics
  • Putting it all Together – Case Studies and Business Model Optimization

Level 1 Goals and Objectives

After our training you should have the tools, templates, and resources to enable you to better:

  • understand current market trends and consumer preferences that drive and shape food, beverage, and value-added farm businesses
  • analyze and rework your clients’ business model to ensure long-term profitability – we call this process Business Model Optimization.
  • know where to access industry information to best inform client advising

Level 2 Focuses On

  • Financial statements and food business financial metrics
  • The proforma: review a process of putting client financial packages together to aid in raising money
  • Using case studies to provide examples of what funding requests could look like across various business models
  • Putting it all together: Analyzing a proforma and Sources and Uses of capital

Level 2 Goals and Objectives

After our training you should have the tools, templates, and resources to enable you to better:

  • understand financial statements and food business financial metrics
  • work with your client and their data to create a financial package for their business
  • know what potential funding paths are available to various food business models
  • optimize your clients capital structure for profitability

Note:

Level 1 and Level 2 are designed to be taken together. Completing Level 1 is required for admittance to the Level 2 sessions. 


About The Trainers

Tera Johnson, FFI Founder, Expert in Residence

Tera Johnson is a serial entrepreneur whose mission is to create the next generation of environmentally and economically resilient food and farming businesses. The founder of teraswhey®, the Food Finance Institute, and the Edible-Alpha® podcast, Tera has personal experience in being an entrepreneur, raising money, launching a national brand and selling a company. Recipient of the UW-Extension Chancellor’s 2017 Wisconsin Idea Award, Tera is a frequent speaker, teacher and financial consultant to sustainable food and farming businesses, communities and economic development organizations, as well as social venture funds and investors.

Sarah Larson, FFI Director

Sarah’s areas of expertise include food systems, start-ups, and food businesses’ sales and operations.

Sarah has over 15 years of experience working with food in both the private and public sector. She was the first employee at Wisconsin Specialty Protein (WSP) where she helped launch the national tera’swhey® brand. In her many roles at WSP, she managed key tasks of business operations from finance to sales. She has also worked for Death’s Door Spirits and was a National Sales Manager at Tribe 9 Foods. Additionally, Sarah managed the Wisconsin statewide AmeriCorps Farm to School Program at the Wisconsin Department of Agriculture, Trade, and Consumer Protection and served as the Farm to Business Program Director at nonprofit REAP Food Group. She currently serves on the Madison Food Policy Council and the Willy Street Co-op Board of Directors.
